( 6-8 persons / work time approx. 20 min)
200 gr dark chocolate
90 gr butter
3 spoons of Rum or Grappa
3-4 spoons of raisins or cranberries (whatever you like or leave it away)
180 gr ground almonds or nuts
4 egg white
1 pinch of salt
4 egg yolk
90 gr sugar
1 pinch of cinnamon (if you like or leave it away)
lemon or orange zest grinded (if you like)
Cover the raisins / cranberries with Rum / Grappa for a minimum of 30 minutes. Melt butter with chocolate slowly in a small pot, – let it cool down a bit. Fold in the drunk fruits including the liquid as well as the cinnamon and almonds / nuts.
Whisk stiff the egg white with the salt. Stir the yolk with the sugar till it’s a light cream, afterwards fold in the chocolate butter mix. Finally fold in the stiff egg white carefully.
Put the mix in a baking form (cal.20-25 cm) covered with baking paper and bake it in the preheated oven for 35 min. at 180°.
Sprinkle the grinded lemon or orange zest on the still warm cake.
