Ricotta Ravioli with Pesto

for the pasta dough: (alternativ: ready-made pasta dough)

200 g     flour

2             eggs


olive oil

for the stuffing:

250 g     ricotta

1             egg yolk

100 g     pesto (home-made or bought)

salt, pepper, nutmeg


Mix flour, eggs, salt and olive oil to a smooth dough. Wrap it into a wettish cloth and leave it for approx. 1 hour.

For the stuffing mix all ingredients together and season it with some salt, pepper and nutmeg.

Roll the pasta dough till it’s just thin. Give the stuffing as dabs on the dough, leave gaps of around 3 cm, apply some yolk around the dabs, cover all with dough, press the edges well together and cut the Ravioli.

Give the Ravioli in cooking salt water and leave them for around 3-4 Min (make sure that the water does not cook anymore).

Serve the Ravioli on a plate garnished with Pesto.
